On the rare occasion we have some leftover slices of bread or haven’t transferred the bread to the freezer in time, we know just the thing to do with it! There are SO many delicious ways to use this bread instead of giving the boot.

First off, we have a classic: turn it into croutons! Croutons automatically make any salad better and they’re so easy to make. Simply dice any of your remaining slices of bread and bake them in the oven until they are crispy.

Bready Caesar Salad

Go big with a panzanella salad, elevate your go-to salad, or try making a delicious Caesar salad!

 

We often forget the most versatile and long lasting way to keep our bread – turning it into breadcrumbs! You can use breadcrumbs to create delicious schnitzels, or use them to bind together a hearty meatball dinner, or making hamburgers and more.

The drier the bread, the finer texture you will get, so we recommend drying the bread out in the oven (you can also turn your croutons into breadcrumbs too!). Once you have dried out the bread, use the pulse function of a food processor or blender and chop until you are happy with the size of your breadcrumbs.

 

Wanting to make something a little sweeter with your bread? Bread puddings are the answer! Bread pudding is best when made using older bread so it holds it shape better. You take slices of your bread and make a pudding mixture and then bake it in the oven to create a delicious dessert or sweet breakfast.

How To: Freeze Bread Like a Pro

From our classic loaves to our artisanal sourdoughs, our bread is baked fresh every day. Like our authentic sourdough process – no vinegars and no shortcuts. Every Sourdough Loaf takes 16-20 hours to make and the dough rests for a few hours at different stages. We don’t speed up the resting process with machines, like some others because this affects the flavour. The end result is bread full of flavour and made with love.

We want to ensure that our customers get the most out of the bread you love whether you’re using it for freshly made sandwiches, morning toast or crunchy croutons in your salads.

Can you freeze bread from COBS?

One of the most common questions we get asked in our bakeries is can you freeze our bread? The answer is yes! You can keep our bread frozen for up to three months. 

Does bread freeze well? 

Many breads can freeze perfectly fine, without any loss to their quality or flavour. The key to keeping the bread’s flavour is down to how you freeze it. The most important thing is to make sure you keep the loaf protected from any air in the freezer. 

Wondering how to make sure your frozen bread lasts? We’ve compiled a few of our top tips that will help your loaf last below.

Our top 5 tips for freezing bread to get the most out of your loaf

  1. While you can freeze your bread on any day before it dries out, our advice is to freeze your bread on the day of purchase. This ensures that you get the most quality out of your bread and the freshness stays intact as long as possible.
  2. Remove as much air as you can from the bag before placing it in the freezer. No need to store in an extra container, keep the bread in the plastic bread bag given from the bakery.
  3. Slicing your bread before you freeze it ensures that you will be able to remove as many slices as you need instead of thawing the entire loaf. No need to slice at home, our bakery offers pre-slicing in two sizes before you leave the bakery.
  4. No need to thaw your bread if you plan on eating it toasted. Simply add an extra dial or two to your regular toaster settings. If you plan on thawing your loaf before enjoying it, simply remove from the freezer the night before and leave at room temperature.
  5. Wondering how long you can freeze bread? We recommend consuming your frozen bread within 3 months for optimal freshness. However, bread will stay fresh for up to 6 months if stored correctly. We recommend adding an extra layer in the freezer such as aluminum foil or freezer wrap if you plan on keeping the loaf frozen longer than 3 months.

Fact: All of our bread is sold on the day it is was baked.

Another fresh fact: Our breads contain no added preservatives and our Healthy breads contain no added sugar or dairy! Talk about FRESH!

Why is it good to freeze bread? 

Although we always recommend to consume your bread within 3 days of purchasing it for optimal freshness, freezing bread is a great way to keep it fresh for a longer time. Freezing bread is a particularly good idea if you don’t eat bread daily, or don’t go through a full loaf by the time it loses its freshness. 

How to unfreeze bread

If your bread is going in a toaster, no need to think about defrosting bread! Just turn the dial up a notch or two for optimal tastiness.

If you’re making a delicious sandwich, follow these steps in how to perfectly defrost your bread:

  1. Remove your slices from the freezer
  2. Leave them on a counter for 2 hours before you plan to use it
  3. Make into the most tasty sandwich ever using all your fave ingredients

Starting with the greatest side dish: the grilled cheese sandwich! If we’re being honest, sometimes we make soup JUST for an excuse to have a grilled cheese sandwich for dinner. We’ll let you decide which is the real “side dish” when you pair your soup with one of these.

A classic that will always be a great option – toast! Some nights, there just isn’t enough time to prepare a long dinner and with delicious bread, who needs it?! Simply pop your favourite loaf in the toaster, add some butter (or not) and enjoy scooping up your soup.

We love putting cheesy croutons on top to soak up the soup, and to get a taste of everything in each bite.

Oscar Bilby is credited with creating the first true hamburger back in 1891 near Tulsa, when he placed a ground beef patty on his wife’s homemade bun1.  This special bond of protein and bun continues to capture our attention, because there are still so many different and delicious combinations of flavours one can create with this hand held meal.

At COBS, we are a little biased when it comes to the bun and believe the best buns are baked fresh from scratch daily, and don’t include any preservatives.

Today we explore three different types of buns and how the dough they comes from contributes to their structure and flavour.

Try a classic BELT breakfast sandwich using a Sourdough Bun.

Focaccia

Focaccia is one of the most versatile breads, and while not a traditional bun, our Focaccia can easily be cut into squares, sliced in half horizontally, and presto – you have just created a top and bottom for your bun needs. Focaccia is made with olive oil, which gives it a soft and fluffy texture and adds flavour. In the winter months, we often think of leftover bread for stuffing and bread pudding, but here are a few ideas for how to use your leftover bread in summer meals.

Croutons

Everything is better with bread, including our greens. You can make croutons using your BBQ, or toast them in your oven. They are so easy to make! Simply brush your bread with olive oil and add seasoning, or if using COBS Bread Focaccia or Turkish Bread, the seasoning is already included! Store your croutons in a sealed container on the counter for up to 3 days, or freeze them for longer.

Caesar Salad with Italian Herb Focaccia

Breadcrumbs

Most of us know we can use breadcrumbs as a topping, but did you also know they make a great binding agent in a hamburger patty, or for coating meats and veggies to grill or fry? The trick is to use a thinner breadcrumb for these applications which you can make yourself using a food processor. The drier the bread, the finer texture you will get, so if using a fresher bread, first toast it in your oven to dry it out, then tear it into chunks to go into your food processor. Use the pulse function to chop it until it is very fine.

There are a couple of types of finer bread crumbs that you can make. Panko bread crumbs work great in your hamburger patties and are often made with white bread, crusts removed. They are often described as slightly flakier than dry bread crumbs, but would still be considered very fine. When making a more traditional dry breadcrumb, leave the crusts on and consider customizing your flavour with lemon zest, oregano, parsley or other herbs. What a great way to dress up a boring old chicken breast!

Bread Chips

Take your Chips & Dip to another level with your own healthier homemade chips or crackers using leftover bread. It is easier if you use unsliced bread, but you can also use sliced bread for a slightly thicker chip or cracker. Get creative and use your cookie cutters to make cracker shapes and season with spices and herbs. Simply cut, brush with olive oil, season and bake in the oven for 10-15 min at 425°F until crispy.

Stomach issues are frustrating, which is why many people will try anything and everything to solve their gut woes! Many people with irritable bowel syndrome (IBS) think that gluten is a trigger for their symptoms, and when they eliminate gluten they often feel better. But is gluten the problem? FODMAPs are fermentable carbohydrates that are commonly found in gluten-containing foods, and these may actually be the trigger.  We asked Registered Dietitian Stephanie Dang to walk us through the research to learn more.

What is Gluten?

Gluten is a name for the proteins found in wheat, rye, barley and triticale. Gluten affects the elasticity of dough, and acts as a “glue” which helps hold food together and maintain its shape.

What are FODMAPs?

FODMAPs stands for Fermentable Oligosaccharides, Disaccharides, Monosaccharides and Polyols. FODMAPS are types of carbohydrates that are found in a variety of different foods and are highly fermentable when digested. This fermentation process is a normal, healthy part of digestion. However, someone with IBS can experience unpleasant symptoms as a result of the fermentation process, including bloating, abdominal pain, gas, diarrhea, and/or constipation.

The most largely researched, evidence-based elimination diet for irritable bowel syndrome is the low FODMAP diet, which was created by Monash University and has been shown to reduce gastrointestinal symptoms in people with irritable bowel syndrome (IBS).  Gluten vs. FODMAPS 

For someone with IBS, reducing their intake of gluten can significantly improve gastrointestinal symptoms. But we know that gluten is not a FODMAP, so why do gluten free diets seem to work? Well, there is some overlap because many gluten-containing products are also high in FODMAPs. So when gluten is eliminated from someone’s diet, so are some of the FODMAPs. For example, wheat, barley, and rye all contain gluten but are also all high in fructans (a type of FODMAP). To make things more complicated, many gluten-containing foods are also consumed with high FODMAP foods! For example, is it the lactose in your milk that is causing tummy distress instead of the gluten in your cereal? Or perhaps it’s the FODMAPs in your hummus, not the gluten in your crackers. Could it be the high FODMAP avocado in your breakfast, and not the gluten in the toast?! Unfortunately there is no test to diagnose gluten sensitivity or IBS, so it can be very difficult to tell what a person is reacting to. If you are feeling confused, book an appointment with your local dietitian. Your gut will thank you.

Do I Need to Cut Gluten Out of my Diet?

Everyone’s gut health and nutritional needs are unique, so there is not one diet that fits everyone. While cutting out gluten may help some people, preliminary research suggests that FODMAPs may likely be the problem, not gluten. If you are unsure whether gluten or FODMAPs are affecting your gut health, seek the advice from a Registered Dietitian.

Our Garlic Cheddar Sourdough is a mouthful of deliciousness with the perfect balance of garlic, mixed herbs and an aged white Cheddar from Paradise Island Foods. This cheese is crafted with 100% pure Canadian milk and aged for up to 9 months, resulting in a creamy texture, with a sharp edge and smooth finish, which compliments the flavours of our traditionally fermented bread.

Paradise Island Foods was founded on Vancouver Island in 1978 by George Thomson who started his family business as a one-man operation distributing quality food products to retailers and restaurants from his home-based business. Today, the family culture of the business continues under the leadership of Thomson’s son, Kevin, who is focused on the development of quality innovative dairy products. COBS Bread is proud to partner with Paradise Island Foods, and in addition to their aged white Cheddar, you can enjoy their feta cheese in other COBS products like our Spinach & Feta Croissant.
